Tonight I made dinner for my parents. Buffalo burgers (aka my new favorite meat/burger of all time!), sauteed string beans & carrots, plus another favorite of mine… grilled lime and cilantro sweet potatoes .
before I get into the grilled lime & cilantro sweet potatoes.. let me talk about my love of buffalo (bison) burgers for uno momento. buffalo burgers essentially taste like a normal meat burger (slight different taste but they are comparable)…but buffalo is much much better for you….check out the stats:
impressive stats, eh? next time you are in the grocery store…pick up some bison– you wont regret it.
next up… grilled lime & cilantro sweet potatoes (from Bobby Flay himself):
Ingredients
- 3 sweet potatoes, unpeeled
- Kosher salt
- 2 teaspoons finely grated lime zest
- Pinch of cayenne pepper
- canola oil- not much just enough to brush
- Freshly ground pepper
- 1/4 cup finely chopped fresh cilantro
Directions
Parcook the potatoes: Place in a pot of water and boil until fork-tender; let cool. Slice each potato lengthwise into eighths.
Preheat a grill to medium or place a cast-iron grill pan over medium heat. Mix ~ 1/2 tablespoon salt, the lime zest and cayenne in a small bowl.
Brush the potato wedges with the oil and season with salt and pepper. Grill until golden brown on all sides (including the skin) and just cooked through, about 1 1/2 minutes per side. Transfer to a platter; immediately season with the salt mixture and sprinkle with cilantro.

Megan from Be.Fit.Be.Full has declared this month as “meatless march”. My sister went meatless for a month (last month) and seemed to have a good experience with it. I’m pretty curious about this topic so I decided to give it a go. Since I started healthy eating/writing this blog I have found that I consume much less meat than ever before….but I do still love my meat (see above about my love for buffalo! haha).
I will start this challenge on March 3 and continue it until April 3. Why? Because (1) I already had buffalo for dinner tonight- before I decided to go meatless and (2) I am making my Mom a birthday dinner tomorrow night- already bought the ingredients- and it involves chicken. Furthermore…I will refrain from all meats (turkey, buffalo, beef, chicken, pork, etc.), and fish….and moderately consume eggs and dairy products such as milk, yogurt, cheese, & ice cream….

Dinner looks great…love those sweet potato fries & buffalo burgers. You will change your mind about giving up eggs, milk, yogurt, ice cream….quick! haha I just gave up the meat. I am so happy to be eating meat again…fish is just too good. I like eating flexitarian style.

I don’t really see the point in going vegetarian. I like meat, so I am going to eat it. Everyone is all about labels these days. Life is too short to not live it the way you want.
haha thats funny that we had the same thing tonight! I do agree with you about the no-meat thing…I want to do it more out of curiosity/as a challenge than anything…I dont plan on being a hard core vegetarian after this. like my sister- I feel like I will be a more “flexitarian” haha (eating mostly plant-based foods while still eating meat as well). I think this challenge will be fun because I will have to find new non-meat recipes to try out!

Also, sorry I will not be joining you on this no meat for a month. I do like my meat and fish and can’t imagine trying to cut back on things I love to eat for a whole month.
yeah it will be tough but im up for the challenge…i think? haha….anyway I bought my bison fresh at whole foods (behind the meat counter) but they also sell it packaged at shoprite (ive bought it before at the shoprite in somers point). both are good!
