Good Evening!!

This morning I woke up early to get my 8 miles in before class. I do not know why but whenever I run early in the morning I wake up before I am supposed to and I always think I slept through the alarm.  So when the alarm FINALLY did go off, I immediately jumped out of bed, threw my shirt on, grabbed a handful of cereal, snapped on the ipod/garmin and set out on my run.  I took a different path today so that made things exciting!  It was definitely nice to get the run “out of the way” early in the morning!

I was happy with the pace…. consistent (something I have tonsss of trouble with!) and a fairly good pace when factoring in the hills.  good job, christina! hahaha

Today I had my Biology of Mammals lab practical.  Basically my professor set the lab up with a bunch of skulls, slides, etc and asked us what certain things were (bones, teeth, muscles, etc) on different mammals.  It was pretty difficult because everything looks so different on each mammal but I think I did pretty well!  Going to the lab two nights in a row was definitely key- I would have absolutely failed (like get a zero fail) if I did not go into the lab!

Dinner tonight was Baked Chicken (evoo + S&P), with homemade pasta sauce, freshly sliced mozzarella cheese, and loads of sauteed spinach and broccoli!

I love them so so much!  But I only have 2-3 left 😦  As soon as I finish the remainder of my stash I will for sure be buying these at the store.  they are AMAZING.  I am interested to see what the other Honest teas taste like (besides the Mate line).  Well I would say dinner was a great success.  Perfect, comforting meal after a long run.  I am thinking tea and ginger hermits (newman’s own organics) will be in the near future (as in as soon as I post this! haha)  off to studying for my physics lab and microbiology quiz!!!

Before I start talking about my first giveaway- lets do a little recap of the day shall we?  Usually after every tuesday I feel completely overwhelmed and stressed out.  but not today. I am not really sure why either.  Maybe because I actually did not mess up in microbiology lab for once. haha.

anyway… I went running after lab- 4 miles- nice and easy- 8:12/mi average.  It was a nice run- enjoyed it mucho!  I had every intention of going to the 6:30 yoga class at my gym but I decided to go to Starbucks to get some tea and study instead.  I have a lot of work to do tonight (trying to get to bed early so I can run 8 miles tomorrow before class!).  I figure I can always do my yoga dvd one morning before class- have not done that in awhile!!

I came home and heated up some of my Vegetarian Black Bean Chili with Bulgar- topped with avocado and baked blue chips 😉

p.s. thank you for all of your pumpkin and ricotta suggestions!  I wish I had the tools to make some good pizza here because ricotta and pizza sounds AWESOME.  I guess I could try it but I am not sure how it will turn out. I guess I am spoiled from having a pizza stone and grill back at home!  anyway….I really would like to try a pumpkin breakfast cookie, ricotta with honey and fruit, and ricotta, egg and tomato on toast 😉  any other ideas?

So yesterday I called ALL OVER the place to track down a can of pumpkin!  Am I pathetic or am I pathetic?  anyway- one nice store clerk finally told me that there is a pumpkin shortage!  Supposedly- due to the abnormal amounts of rain this year- some of the pumpkin crops were ruined and thus….”the canned pumpkin shortage”.  well it not really a “shortage” persay- everything is just being pushed back by 2-3 weeks.  The clerk said that in a few weeks, so they say, libby’s pumpkin will be hitting shelves (in large quantities) everywhere. let’s hope so!  oh and supposedly if you do find pumpkin in stores- its only in the big 29 oz cans?  hmmm. I have no idea why- im just relaying the info my friends.

But  anwayyyyyy I was finally able to track down some pumpkin at the the one and only- Wegman’s!

CIMG4126I also bought some bulk candy, whole wheat pasta, and the HUGE honey crisp apples I told you about last week.  successful trip if you ask me.  Thank goodness I found this pumpkin though- I was beginning to worry I would fail at my quest haha

I made a pumpkin/oat combo (my first time adding pumpkin to my oats) that I saw holly make last week…..

1/3 C oats, 1/3 C h20, 1/3 C skim milk, cinnamon, nutmeg, 1/2 C pumpkin, drizzle maple syrup, few raisins, spoonful of Cinnamon raisin peanut butter:

CIMG4138This was really good! the only thing I wish I added was some sliced banana (but I snacked on one a little while later)!  that would have made it all the better. and I swear to you- those raisins are in there- must be hiding under the surface of the oatmeal hahah.  Pumpkin by itself can be sort of bland- the nutmeg, cinnamon, and maple syrup really helped to bring out the flavor of the pumpkin.  Now…what to do with all of the left over pumpkin.  I am considering another combo—  oats, vanilla unsweetened almond milk, nutmeg/cinnamon, walnuts, raisins, and banana?  hmmmm……

anyone know of any other pumpkin oat/yogurt/anything else combos??

okay…time to review some microbiology and then head over to the post office before class.  I dreadddd tuesdays.  class from 9:25 straight to 4:30 (microbio, bio of mammals, calculus, microbio lab), then I have to meet with my physics teacher, run 4 miles, and go to my school’s yoga class ;)!!  Tonight my roommate becky, friend mike, and I are going back into the lab to study for our lab practical tomorrow! busy busy!  have a great day!!


p.s. I have some leftover ricotta cheese from last night’s dinner- what shall I do with it?  I know some of you guys make breakfast with it- know of any good combos?

Hello hello!  Evergreen monday yet again.  Today- I ate lunch at home and decided that I would get some tea/froyo at the evergreen instead.

I only got my physics homework done- it took awhile to read the chapter and solve the problems!!! I still need to study microbiology tonight 😦  and then I took a venture over to Wegman’s- I will tell you about that tomorrow my friends.

For dinner tonight I made Whole Wheat Penne with Sweet Potatoes and Ricotta Cheese!!!!  I saw this on Meg’s (Be Fit. Be full.) blog (who got it from cooking light magazine) and it looked amazing so I got the ingredients to make it when I went to Whole Foods this past weekend!


  • 6 oz spaghetti
  • 1 tbsp olive oil
  • 1 small sweet potatoes cut into 1/2 inch pieces
  • Kosher salt and black pepper
  • 1 shallots, sliced
  • 1 tbsp chopped fresh rosemary (I used dried)
  • 1/8 cup grated Parmesan
  • 1/8 cup ricotta


  • Cook the pasta according to the package directions. Reserve 1/2 cup of the cooking water. Drain the pasta and return it to the pot.
  • Meanwhile, heat the olive oil in a large non-stick skillet over medium heat. Add the potatoes, 3/4 tsp salt, and 1/4 tsp pepper and cook, covered, stirring occasionally for 10 minutes. Add the shallots and rosemary and cook until the potatoes are tender, 3 to 5 minutes.


  • Toss the pasta with the potato mixture, Parmesan, and the reserved cooking water. Dollop with the ricotta before serving.


and the verdict is…..  great!!  oh man the smell of the evoo, rosemary, and shallots while cooking was AMAZING.  this dish is really really tasty/fun/different/quick to make/etc. definitely recommend that you try this!  wooohooo look at me! 2 new recipes 2 days in a row!  the picture actually makes this dish look kind of “dry”…why is that? not really sure but i hope you do not get the wrong impression because this was not dry or blah at all!

okay- well I have a lab practical for my biology of mammals class on wednesday so my roommate Becky, my friend Mike, and I are going over to the lab right now to study for it together! It is going to be creepy to be in the lab late at night! ahh!  see you in the morning!

Spaghetti Squash!

Sunday already?  Geez….it feels like the weekend just started!!! boo.  anyway…where did I leave off? oh yeah… Last night.  We went out to a bar close by to our school- it was a pretty good time!  Nothing AMAZING and out of this world but ….fun.  I have not been “out” in a pretty long time, so it was nice to just kick back and relax…something I definitely needed.

Kelly’s mom and sister came to visit today and took all of the roommates out for breakfast (I guess you could call it breakfast). We ate at one, so I made it lunch for me but it was breakfast for the rest of my roommates!  All of my roommates sleep super late; waking up before noon is early for them. haha they are funny….or maybe I am just weird? hmm.  I do not know why but I physically cannot sleep that late ever.  My body just automatically wakes up early everday- regardless of whether or not I went out the night before.  Anyway- I woke up this morning hungry- so I decided to make myself a green monster!

We went to a place nearby campus called Miss Shirley’s .  It is a pretty cool place. they have a lot of fun/different dishes.  I stuck with my “usual” breakfast when I go out to a restaurant.  aka oatmeal or an omelette…what did she get? an omelette!!  I get an egg white omelet with wilted spinach, tomatoes, and red onion,pumpernickel toast, and a side of fruit 😉  yummy yummy in my tummy. breakfast number 2 was a great success! hahaha

The rest of the day was spent catching up with my schoolwork.  I did not do an ounce of school work all weekend and you know what?  I do not really care!!!  WOOO.  I was in desperate need of a break from everything- so that is just what I gave myself.  It is a good thing that tomorrow is “Evergreen Monday” because I will for sure be getting lots of work done!  I am such a dork- naming my mondays “evergreen monday” and my fridays “lunch date fridays” haha.  whatever makes me happy I guess.

Before spinning I enjoyed some green juice– two green drinks in one day? WOAH NOW.  the usual combo: Romaine, cucumber, carrot, kiwi, orange & lemon:


I taught my spinning class from 7-8.  Today I chose the playlist Ready to go:

Picture 1After the class I went to the grocery store to pick up the canned pumpkin (that Whole Foods did not have yesterday) plus two frozen Kashi entrees that I have been wanting to try- Tuscan Veggie Bake and Mayan Harvest Bake. but they had NO PUMPKIN LEFT!!!!  what is the deal with this? no one has it!! I am going to hunt for it tomorrow because i really really want to try it in my oats this week!

And then…I heated up the Spaghetti Squash that I made last night!  I was originally planning on having this for dinner last night, but when Anne’s (my rooomate) parents offered to take us out, I clearly could not refuse! So, instead, I decided to have the spaghetti squash dinner tonight!

What is spaghetti squash you say?  Well I saw this on Dawn’s Blog and it looked really awesome- so at whole foods yesterday- I picked up a spaghetti squash so I could try it on my own!

Spaghetti Squash

Step 1: cut the squash in half and scoop out of all the insides (seeds, etc.)

Step 2: Set the oven to 350 degrees and roast for about 40-45 minutes.


Step 3: Run a fork along the flesh of the squash.  “Spaghetti’ shapes should come right off- and this should come off EASILY.


Step: admire your empty  squash:

CIMG4104Step 6: cut up some veggies, season with EVOO, S&P, and roast in the oven at 400 for about 20-30 minutes (I used broccoli, zucchini, onion, carrots, and red bell pepper.


Step 7: Top the the spaghetti squash with the veggies…and grated parm (not pictured) of course… and E-N-J-O-Y!!


CIMG4123verdict: AWESOMEEEE seriously awesome. the veggies tasted sooo great with the evoo and salt and pepper and the squash was amazing. definite recommend this to everyone!  the grated parm really made this even better than it already was.

All I have to say is OW.  Let’s just say my 15 mile run did not go as planned!  I had the usual TJ cinnamon raisin english muffin with AB and PB pre-run, drove to the NCR trail, and set out on my run.  for the first 7 miles, I felt AMAZING.  running felt truly effortless.  I was loving life, enjoying the scenery, enjoying the fall weather, enjoying my music.  AS SOON as hit the half way mark, however, it felt like someone had taken two knives and jabbed them in my sides.  normally when I get cramps, I slow down for not even a 1/4 mi and take slow, deep breathes.  but this trick did not work AT ALL.  taking deep breathes just made the knife-jabbing pain WORSE.  It was honestly agonizing.  I was pretty upset/annoyed because my legs were not tired at all and cardiovascularly (is that a word?) I was also fine.  It was just this pain that was stopping me.  So anyway- for the rest of the run (7.5 miles to be exact) I trudged on like a snail.  But atlas, I made it back to my starting point!  hey…as forest gump says…SHIT HAPPENS!!!!

The breakdown:

Avg pace: 8:34/mi

Time: 2:10.48

First half Avg- 7:49/mi

Second half avg: 10:42 /mi

….haha kind of funny when you see the breakdown of it all!

After the run I headed over to One World Cafe and got my Mocha Blast Smoothie!!!

I asked them what kind of Mocha powder they use and they told me it was called Big Train.  I think I may buy this online and make my own Mocha Blast smoothies at home 😉 I then called every friend I knew to see if they wanted to get a pedicure with me but they were all either sleeping (it was 12:30 pm haha) or busy. BOO.  so I went by myself because i really needed a pedicure!

now of course this was not just a normal, routine pedicure.  When I sat down in the chair and took off my shoes I realized that my I had bled through not only my socks but through my shoes as well! AHH!!!  and of course everyone saw at the exact moment I saw it.  Great. Now what?  The lady proceeded to tell me that she would still do my pedicure but I had to keep that foot out of the wash basin.  hey, works for me!  I got a nice deep purplish color- very fallish.  and now my toes feel fantastico!!!

I finally made it to the one and only Whole Foods:


I got a some Spaghetti Squash (to make “Spaghetti” that I saw on Dawn’s Blog), avocado, carrots, red bell pepper, broccoli, zucchini, cucumber, sweet potato, rosemary, shallot, kiwi, lemon, strawberries, blackberries, bananas, pomegranates (3!), ricotta cheese, skim milk, walnuts, SEDUCTION BREAD!!!!!, and 2 cups of White Lightening Chicken Chili.  I ate lunch there too (the chili + lots of seduction bread ;)).  they still didnt get canned pumpkin in!  I am just going to have to go to regular food store tomorrow morning and pick some up!

Anne’s (my roommate) parents are taking us out to eat now!! We are going to Ryan’s Daughter and I know EXACTLY what i am getting- I LOVE IT- the iliad- blackened grade ahi tuna atop mixed greens with an herb and feta vinaigrette. garnished with bell pepper, olives, onion, cucumbers, pepperoncinis, and feta 😉  VERY EXCITED!!! then we are going out!   have a nice night!

FINALLY, it is friday!!   before I start talking about friday- let me recap about my 4 mile run yesterday.  I did this after my classes were over (around 3:30- got out of physics lab early….woohoo!) and averaged 8:26 min/mi.  the breakdown: Mile 1= 7:59 Mile 2= 8:14 Mile 3: 9:00 Mile 4: 8:30.  Although the splits do not suggest it, I actually felt very good on this run!  The weather was absolutely GORGEOUS and I took a totally new route- so it made the run pretty exciting!  However, I was hit with some of the biggest hills I have encountered by my school to date.  I just took them slowly and steadily.  Although they significantly decrease my avg pace and hurt like H**, they are good to do and it makes me feel that much better after the run is over.  I am thankful, however, that I found the NCR trail to do my saturday long runs at.  I could not imagine running up and down hills for 15 miles straight!! AH!  Oh and at one point during the run yesterday I passed by this mom pushing a stroller with two babies in it, one toddler on her shoulders, while talking on her cell phone.  Thought it was the strangest/funniest sight I have seen while running in quite some time.  Too much multi-tasking if you ask me haha.

anyway…onto FRIDAY!

Yesterday I had one of my HUGE honey crisp apples with some naturally more PB and I discovered that the jar was getting pretty darn low.  I really never thought I would get THIS excited about an empty jar of pb….oh the small joys of life 😉


Why so excited you ask? Today, for the first time ever, I tried what I have seen floating around the “blogworld” for quite some time now/something I have dying to try/something that Taylor had for breakfast yesterday….OATS IN A JAR!!

In the mix: 1/2 C oats, 1/2 skim milk, 1/2 C water, 1/2 mashed banana (cooked in the oats), 1/2 sliced banana, cinnamon.



and the verdict is….YUMMMMMMM.  A jar full of oat/peanut butter bliss.  the only other thing I would have added to this would have been some raisins (soaked during cooking of course).  but other than that, this was AWESOME.  I really like how I mashed half the banana and cooked it in and used the other half to slice on top, too!  It is so funny, although the jar looked practically empty, there was SO MUCH peanut butter left inside!  Sort of like when you make cookies or brownies and you get to scrape the bowl 😉

I had my first physics exam of the semester this morning.  It went really really well!   I feel really confident with all of my answers.  That is a good way to start the weekend if I say so myself 😉  After my physics exam I checked my mailstop and found that my Giveaway that I won from Ashley’s blog!!!!!

Is this not the BEST giveaway EVERRRRR????  This made me SO HAPPY!!  Thank you so much Ashley and Katie (PR associate from Pond’s).  I am going to bring all of this along with me tomorrow morning to the NCR trail!  After I run I always like to wash off my face and change because I dont actually get back home u 😉

and then… I went on my Friday Lunch date with my two friends Rosina and Meaghan!  I lived with Meaghan freshmen year and we both went to high school together.  Meg is on the swim team and has a different set of “best” friends than I do (although I am friends with her friends).  So…between both of our hectic schedules and hanging out with a different set of friends, we do not get to see each other as much as we would like to!  Rosina used to be on the swim team as well but decided to quit last year.  But- it is the same deal with her…both of us are busy/on seperate schedules/different set of friends.  I am so happy I met rosina.  With meg being on the swim team, I met lots of swimmers my freshmen year…they are all really awesome.  so anyway…. we decided to designate one day a week to US!  catching up, enjoying each other’s company, etc.  I love love love them!  We were going to go to Red Star in Fells point (Ashley from Daily Goods recommended this andddd Michael Phelps & Shaq went here after the taping of Shaq’s show- taped at my school’s pool), but Rosina and Meg both had to be back on campus by 3 pm for the official changing over of Loyola College to Loyola University.  Instead, we are going to go to Red Star next Friday!  No biggie.

Today, we decided to walk over to the Evergreen Cafe. It was a nice walk since the weather was absolutely BEAUTIFUL!  It really felt like fall weather today!  I got the same thing I got on Monday- The power-house sandwhich- 12 grain bread with avocado, hummus, sprouts, cucumber, carrots, and tomato but instead of the veggies on the side imagine a fruit salad! haha (I did not want to take a picture in front of them!!  I am still a LITTLE shy, okay?!)

CIMG4013Always a good time with Meg and Rosina 😉 Then at 5:30, Rosina and I went to a Body Flow at our school gym.  Body Flow is the “Yoga, Tai Chi, Pilates workout that builds flexibility and strength and leaves you feeling centered and calm. Controlled breathing, concentration and a carefully structured series of stretches, moves and poses to music create a holistic workout that brings the body into a state of harmony and balance.” Today is supposed to be a rest day, but who doesnt need some body flow in their life?  This was the first time going to this class for me and I thought it was great! At first I was not too sure about it. but I really liked how different aspects of yoga/tai chi/and pilates were intertwined into the class.  Rosina, who has never done yoga/pilates before, really loved this!  She was amazed at how energetic she felt after the class.  It was cool to see a “newbie’s” reaction to the way yoga makes you feel.  We both walked in VERY tired, and walked out full of energy and at peace/calm.

For dinner, I made something similar to what Mary made a few nights ago:

Baked chicken (in oven at 375 degrees- EVOO/S&P, cook one side, then flip), added some homemade pasta sauce, sliced mozzarella cheese, & fresh basil….all on a base of sauteed baby spinach (evoo + garlic)…so basically I made my own version of Chicken parmesan!



Tonight is my night to kick back & relax…and that is just what I am going to do!  A little while after dinner, I was feeling up to some Starbucks and decided to give the Pumpkin Spice Latte a go!  Liz over @ Therefore I Eat seemed to really like this…so I figured…what the heck…I will try it!  Rosina and Meaghan came along for the ride too 😉  (woohoo look at us hanging out for the entire day!)


Verdict of the Pumpkin Spice Latte…. GOOD!!  I am normally not a coffee/latte/cappuccino/frap drinker (I actually do not even know the difference between these drinks)…Usually I just stick to tea/iced tea…but I really enjoyed this!  As I got closer to the bottom of the cup I tasted a stronger pumpkin spice flavor…. I wish the overall cup was as strong as the bottom of the cup.  But, oh well!

Okay…Time to do a whole bunch of…NOTHING.  Well actually I do have to pack my “running bag” for tomorrow’s long run of 15 miles.  Going back to the NCR trail again!  😉  Very very excited!  I am also going to load up my shuffle with songs from Kathleen’s Playlist.…I will check back in tomorrow!! CIMG4055I remember reading Evan’s review on this flavor- Like me- he is a HUGE fan of the Mocha Milk Chocolate flavor.  This flavor was different from the mocha milk chocolate in that it had bits of espresso bits in it.  Evan didnt think that there was a strong “coffee” flavor in this bar but I myself did taste it.  I liked the slight crunch that the espresso beans added to this too!  If i HAD to chose between the mocha milk chocolate and this, I would chose the mocha but honestly…I really really liked this one!  It really depends if you are in the mood for milk or dark chocolate!
