serves 4
- 1/2 shredded Zucchini
- 2 T canned, diced chilies (drained)
- 1/2 tsp ground cumin
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 lb uncooked ground chicken (or turkey)
- 1 T EVOO
- 1/2 C salsa
- 2 T chopped green onion (scallion)
- 2 T snipped fresh cilantro
- 1 T Fat free plain yogurt
- whole wheat burger buns (I use Arnold Select 100% Whole Wheat Sandwich Thins)
Combine the zucchini, green chiles, cumin, salt, and pepper. Add chicken (or turkey) and mix well. Shape the chicken mixture into 4 patties. In a large skillet cook the patties in hot oil over medium heat about 10 minutes or until no longer pink, turning once. (can also do this on the grill). Combine the yogurt and salsa and use this on top of the burgers.
