Hellooooo….spinning class went very well this morning- my sister– said that “it was the best one yet”- WOOO WOO!  I love spinning/biking so much.  Teaching Spinning gives you such satisfaction- I love hearing feedback from people who attend my classes and i love meeting them and getting to know them more.  not to mention that its a great workout.  and even know i am not a great cyclist- when I was biking in the race last weekend I was thinking to myself “damn, this is so much fun” I was jamming out on my ipod shuffle- taking in some awesome scenery- and just enjoying life.  okay ill stop now.  anyway…check out the playlist!

I am off of work today- i think we are going to go to the bikeshop to get my sister’s bike tuned up and then maybe hit up the beach if its not too windy. yesterday the sand literally was hurting me so I had to leave. BOO.  I have to work on my horrible short and t-shirt tan line- its not looking so good as of now haha tonight I am going to vinyssa yoga- and my favorite instructor is teaching- she is AWESOME- she pushes you further into poses and then massages you sometimes- yeah thats right I said she massages you. its greatttt

OH and yesterday I saw THE UGLY TRUTH!!!

I really was not expecting much out of this movie. i mean yeah yeah its  a chick flick but it really is GOOD.  there was a bunch of guys in the theater too and they all seemed to like it too haha….there is a lot of um “adult humor” so thats probably why they liked it haha.  but it was funny, cute, romantic, etc.  not to mention that gerard butler is HOTTTTTT- so rugged looking- love him. haha

Good Morning!  Today I woke up later than usual- 8:45!  I also stayed up a little later than usual, too.  I was busy talking to people online, blogging, watching friends episodes, facebooking, real important and real cool stuff.

I realized that I have not made a Green Monster in AGES- so make I did:

I had this with a mini cinnamon raisin bagel from Rudi’s Organic Bakery with Almond Naturally More and deep dark dreams PB & Co.

that is a big breakfast- and ALOT of nut butters!  I was not even SUPER hungry- I really just WANTED TO EAT.  does this ever happen to you? i do not really care too much- i would MUCH rather have a big breakfast than a big lunch- I just love breakfast so much!

Well I am off of work today- and have no run scheduled- just bikram yoga tonight!  I think ill wash my car today, come up with a good spinning playlist for tomorrow, and hit up the beach!!

hey hey hey!  Today was a pretty good day!  Started out with my scheduled 3 miler for marathon training.  then I had a bowl of overnight oats!  and I tried what mamaweeds suggested to do- I added chopped DATES and let them soak overnight. YUMMMM- I didnt think I could top my raisin concoction- but I did. the dates added such a sweet flavor!

DSCN1218In the mix: 1/2 C Oats, 1/2 C skim milk, 1/4 C Vanilla Chobani, sliced banana, chopped dates (soaked overnight), cinnamon.

Work today was pretty awesome- besides getting yelled at by two people (fyi: I am a metermaid!).  but after lunch we never went back to work and played rummy 500– FUN Game.  and I won! BOO YAA

My cousins bailed out on dinner tonight 😦 but my sister and I still took my grandmom out anyway- to a local italian placed called Venturas Offshore.

they have pretty much THE BEST bread everrrrr here- pizza bread! YUM

CIMG3027and for dinner I ordered their homemade whole wheat fettucini with red sauce, broccoli, spinach, & chicken!  it was HUGE!

CIMG3028this was SO good!  I didnt finish it all but I did eat most of this!  Afterwards, we dropped my grandmom off at home and came back home.  We were going to go to the movies to see The Ugly Truth or Orphan. my sister wasnt feeling up to the movies, though. sshe said we will go on wednesday or thursday- so that is fine by me!  so instead I just pigged out on dark chocolate covered raisins…I AM STUFFEDDDDDD- hate that feeling but it was worth it!  no work tomorrow or run for that matter- just bikram at night. what will i do during the day!?  i am thinking washing my car and heading to the beach to soak up some rays 🙂

before I tell you what I found…let me update you on a few things…

today for a snack I tried out a Jocalat bar!  in Hazelnut chocolate

nutrition info: 190 cals, 5 g fiber, 4g protein

Verdict: I am not  a HUGEEEE fan of the jocalat line- although it is good!  My first bite of this bar i thought “eh, its just okay” but after I got a chance to really taste it and take another bite- i actually quite liked this one!  definitely not as good as others that I have had- but definitely still good.  impressive nutrition info too!

in other news… yoga was awesome tonight- its been… hmmm 4 days since my last class?  thats a long time for me since we usually go everyday.  I just love yoga so much.  I feel so energetic afterwards!  My sister and I finished up the last of the split pea soup for dinner with pita chips we baked in the oven.  yumm…. then we went foodshopping- I finally got two nut butters that i have been eyeing up for weeks- PB & Cocinnamon raisin swirl and dark chocolate dreams – cannot WAIT to try them out!  ….and look what I found:

CIMG3019pomegranate chobani!!!!! I spotted this in the very back of the fridge at the foodstore- and got WAY too excited about yogurt that my sister told me to quiet down because people would start to stare and think we were very strange haha….cant wait to try this out tomorrow!!

after food shopping my sister and I got Banana Whip! topped with reeses cups of course!!

Thankful.

Good morning!!  Okay- so I was reading a post on the Daily Balance about the small things we are thankful for:

“Take a moment to think back on your week. No matter what issues came up or bad days you encountered, there is ALWAYS something to be thankful for. Maybe someone smiled at you on the street or maybe your favorite song got you through a stressful afternoon. Maybe you had perfect weather on your run or made a delicious dinner that turned out perfectly! No matter how small they may seem, it’s important to take stock in the things that made you smile throughout the week.”

So during the week I jotted things down of things that I was thankful…here is what I came up with….

I am thankful for:

  • getting compliments from participants in my spinning class
  • running one of my three milers last week at a  7:28 pace
  • making dinner for my grandmom and spending with her
  • going to my yoga classes
  • my favorite yoga instructor, darlene, who massages you and helps you push further into a pose.
  • eating guacamole for the first time in a couple weeks- oh how I have missed you
  • having larabar send me 32 bars 🙂
  • watching old friends episodes- never gets old!
  • hanging out/making dinner/working out with my sister
  • eating/making fig/almond blondies couresty of veggiegirl’s recipe
  • trying overnight oats for the first time
  • having banana whip (aka raw banana icecream) with reeses peanut butter cups
  • spending time on my boat with my family
  • having the ability to run
  • having the ability to bike
  • getting free stuff at the barbara cook run/bike/walk
  • participating in the barbara cook 31 mile bike ride
  • seeing/spending time with my oldest sister

In other news- I finally got my scheduled 6 miler in today- here is a review on how it went- not so good but oh well!  Came home, got ready for work and had a bowl of overnight oats!

Rained out.

Good day Mate!  Saturday I participated in the Barbara Cook Ride!   You can chose between a 31 miler or a 62 miler…I chose 31 because I have never done anything more than that- so I didnt want to jump the gun!

5900_123440055232_64552900232_2684934_4573848_nThis year’s run,ride, and walk honored Barbara Cook, who passed away in 2008 after a long battle with cancer.  The event raised money and awareness for cancer and benefits the Lance Armstrong and South Jersey Healthcare Foundations. I woke up very early on Saturday morning- got ready to go- had a bowl of overnights oats, again 🙂 and headed out the door.  I stopped at starbucks and got a green tea because the ride was about an hour and I needed something to keep me busy!  I literally JUST made it!  There was a mix of riders— some really good riders who belong to clubs, riders like me who have a road bike and just do it for run or cross training, and others who have hybrids or mountain bikes.  I averaged about 18-19 mph- which is very very good for me!  I thought I was going to die off after awhile but that never happened WOOT WOOT!  Most of the reallllyyy good riders opted for the 62 mile ride- and I ended up being one of the first to finish the 31 miler and the first female to finish…wohooo!  Now if the other riders opted for the 31 mile ride instead- i would have been SMOKED…they were REALLY good.

After I finished, I walked around- ate the food from the fuel tent- and got some freebies!  Bars, livestrong bracelets, livestrong stickers, livestrong pins!  fun stuff.  I then headed back home to my family who was fishing out in the bay and said they would come back to the dock to pick me up… we “fished”- AKA caught nothing.  I really do not even like to fish-I like just being out on the water and relaxing.  We stopped at a bar on the water to grab something for lunch and sit out in the sun.  It was a lot of fun!  the sun really takes alot out of you though.  Then at night we went to a grad party until about midnight- so you can imagine I was POOPED.

which brings me to marathon training…I was supposed to wake up before work and run- but when my alarm went off there was NO WAY i was getting out of my bed.  So I thought…oh ill just wait until after work- no big deal!  well I got changed afterwork- headed out the door- to find a thunderstorm fastly approaching….aka I could not run.  and the gym was closed so I couldnt get the 6 miles in on the treadmill.  Talk about being bummed– this totally sucks!  but I decided to just switch things around next week to make it all work out.  the 6 miles is going to get in tomorrow instead.  you can check my marathon training page to see my plan.

okay- dinner time!!!  my family grilled out tonight- yum- I didnt help at all though so I honestly do not know whats on the menu!

Good Morning!!

I know alot of you make overnight oats and I have always been curious about it- and then I saw that mamaweeds had made a post about them- and her pictures looked SO good- and so I decided to give it a go.

Overnight Oats:

Step 1: Combine 1/2 C oats (uncooked), 1/2 Unsweetened Vanilla almond milk, 1/4 C plain chobani yogurt, and raisins

***note*** (1) chopped dates are AWESOME in overnight oats too!  (2) you do not have to add dates or raisins- you can just add whatever in the morning! (3) if you use unsweetened milk, use vanilla yogurt, vice versa

Step 2: cover with plastic wrap and place the bowl in the fridge overnight.

Step 3: in the morning…add sliced banana, flax, and cinnamon…and E-N-J-O-Y-!

**note** you can add anything in the morning obviously- from granola to strawberries to walnuts…whatever you wish!

Thank you mamaweeds!  This was sooo good!!  Nice and creamy.  perfect for the hot summer months.  and putting the raisins in overnight was a stellar idea on my part because they plumped up and were sooo delicious in the morning.  Cannot wait to make this again!

I have to say, I was sure that I would not like this.  I never actually had keylime pie but just the though of it makes me want to gag.  but this bar was SO GOOD! there was a slight taste of coconut with a sweeter taste of the lime and the nice salty/crunchy taste of the nuts.  ….just another larabar that i love!

Ina Garten’s Chicken Chili Soup:

yesterday was a miserable, rainy day- so my sister and I decided that the perfect thing to make for dinner would clearly be chili!  we have made this before and have loved it.  this time we didnt feel like having chicken so we just made the same recipe without the chicken- so i guess this is Veggie Chili.  We topped this with our guacamole and baked blue chips. the picture really does this dish NO justice.  I can never seem to get a good picture of soups for some reason. trust me- this recipe is worth it.

  • serves 6-8
  • 4 cups chopped yellow onions (3 onions)
  • 1/8 cup good olive oil, plus extra for chicken
  • 1/8 cup minced garlic (2 cloves)
  • 2 red bell peppers, cored, seeded, and large-diced
  • 2 yellow bell peppers, cored, seeded, and large-diced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/4 teaspoon dried red pepper flakes, or to taste
  • 1/4 teaspoon cayenne pepper, or to taste
  • 2 teaspoons kosher salt, plus more for chicken
  • 2 (28-ounce) cans whole peeled plum tomatoes in puree, undrained
  • 1/4 cup minced fresh basil leaves
  • 4 split chicken breasts, bone in, skin on
  • Freshly ground black pepper
  • can of chickpeas **
  • can of kidney beans **
  • **we used beans instead of chicken tonight- but you can opt out of the beans and use chicken instead!

Directions

Cook the onions in the oil over medium-low heat for 10 to 15 minutes, until translucent. Add the garlic and cook for 1 more minute. Add the bell peppers,beans, chili powder, cumin, red pepper flakes, cayenne, and salt. Cook for 1 minute. Crush the tomatoes by hand or in batches in a food processor fitted with a steel blade (pulse 6 to 8 times). Add to the pot with the basil. Bring to a boil, then reduce the heat and simmer, uncovered, for 30 minutes, stirring occasionally.

Preheat the oven to 350 degrees F.

Rub the chicken breasts with olive oil and place them on a baking sheet. Sprinkle generously with salt and pepper. Roast the chicken for 35 to 40 minutes, until just cooked. Let cool slightly. Separate the meat from the bones and skin and cut it into 3/4-inch chunks. Add to the chili and simmer, uncovered, for another 20 minutes. Serve with the toppings, or refrigerate and reheat gently before serving.

Today is a scheduled rest day for marathon training.  I may do some bikram yoga later, depending.  My sister bought a foam roller last week- i think i wanna try it out today! i hear it hurts!!! but i am sore and i think it will help!!  not really sure what the plans are for the day…
