Hey everyone! hope you all had a fun/relaxing Memorial Day weekend!  Sunday morning my sister and I ran in the Kenny Wayland Memorial 10K.  this is our second year running the race. Last year my time was a little better than this year’s time. (my time last year was 45:20 and this year it was 45:46-average pace: 7:23/mi).  Here is the breakdown of my splits:

mile 1: 7:07

mile 2: 7:09

mile 3: 7:20

mile 4: 7:26

mile 5: 7:38

mile 6: 7:41

last .2: 7:01

slowed down quite a bit in mile 5 and 6.  I did not feel 100% during this race. Perhaps it was due to the batch of brownies my sister and I consumed the night before??? (see the post below)…who knows! But I felt a little queezy once I hit the turn around.  My sister and I were joking after the race  that were both thinking to ourselves, “I wonder if Mary (or christina in my sister’s case) would kill me if I just stopped right here, threw up and walked home?” hahaha I truly felt that bad during the race.  I knew If i didnt dig in and tough it out that I would be upset with myself for throwing in the towel…and I would be letting my sister down too!

I act like I did horrible or something in this race. I didnt, at all!  My sister got 3rd female overall and I got 4th female overall.  My sister placed first in our age group 20-29 and I placed second (got a medal WOO HOO!!) and Maria (whose blog I just stumbled upon) got 2nd female overall. she snuck up on my sister and I towards the end of the race-she was flying- on a mission for sure. and basically crushed us to the ground. hahahah I was very happy for her, though!!! she had a solid race and was so excited at the awards ceremony! I remember she said she couldnt wait to get home to her husband to tell him she got second overall! …  the first place female was a lady named Patty. She is basically a rockstar down the shore. perhaps one day I can be as good as her… hmmmm

This morning, my sister, todd (her boyfriend) and I road our bikes over the bridge and to the end of OC. We stopped at the top of the bridge to take some photos. The view is so awesome from the bridge….I love nothing more than riding from my house to Ocean City.  beautiful scenery..it really makes me so happy.  unfortunately, I got TWO flats during this ride.  Todd helped patch the first (stupid me had everything but patches with me…so we had to ask someone for help) but I guess it didnt really hold up so well because 40 blocks later I was flat again.  I had to call up my dad to come for me and he brought me a new tube and we changed the tire together.  Turned into a MUCH longer bikeride than I had originally anticipated!

Game 2 of Flyers/Blackhawks tonight….lets go flyers!

then back to class from 8-4:30 tomorrow- have two exams tomorrow- did I study yet? no sir.  I better get on that before the game!!!!

Tonight we had some family over for the Flyers-BlackHawks game (for those of you who are not following the playoffs…this is the final round of the NHL stanley cup playoffs—winner takes the cup- tonight was Game 1).  The game was interesting to say the least. The Flyers ended up losing 5-6….laviolette (flyers coach) pulled our goalie (leighton) for boucher in the second period….did not really agree with that decision… what do you think? although it was disappointing to lose Game 1…it looks like the series is going to be a good one and I cant wait to see them back in action on monday.

I saw a recipe for brownies on  IowaGirl’s blog…it looked delicious so I decided to make it for the game tonight….

In a glass mixing bowl, combine:

• 3/4 cups melted Butter
• 4 squares un-sweetened baking Chocolate*
Microwave Butter and Chocolate until melted (on high about 2 minutes)

Add:

• 2 cups Sugar, then mix
• 3 large Eggs, then mix
• 1 tsp. Vanilla
• 1 cup Flour, then mix
• 1 cup large Walnut pieces and chunks of premium-grade Bar Chocolate (Gently fold in – don’t over-mix)** this is optional…I did not do this.

Stir Sugar into Chocolate until well blended – stir in Eggs and Vanilla, mix in Flour, stir in Nuts and Bar Chocolate. Pour into a 9×9 buttered baking dish and bake 35 minutes or longer and 350° until toothpick in center comes out with fudgy crumbs (do not over-bake).

SERVING SUGGESTION:
Place brownies on an appropriate serving dish. Zap briefly in the microwave oven. Remove. Bury each brownie with a generous scoop of premium vanilla ice cream, then ladle on fresh raspberries or another favorite fresh seasonal fruit.

Last night I wanted to try out a new recipe for dinner and so I chose a recipe I had been wanting to make in my Ellie Krieger cookbook… buffalo chicken salad. I was pleasantly surprised that it came out REALLY good!  Both my Mom and Dad really enjoyed it, too.  If I had to change anything for next time, I would probably slice the chicken thinner and add some lemon juice and celery salt into the hot sauce (before coating it with chicken)- per my momma’s suggestion.

Ingredients:

  • 3 boneless, skinless chicken breast
  • 3 tablespoons Lousiana Hot Sauce
  • ~2 teaspoons olive oil
  • 2 hearts Romaine, cut into 1-inch strips (about 8 cups)
  • 4 celery stalks, thinly sliced
  • 2 carrots, coarsely grated
  • 2 scallions, green part only, sliced
  • blue cheese dressing (recipe is below)

Preheat the broiler. Put the chicken between 2 sheets of waxed paper and pound with a mallet or hammer so the chicken is an even thickness of about 3/4-inch, then cut the chicken crosswise into 1/2-inch strips. In a large bowl, combine the hot sauce and the oil, add chicken and toss until the chicken is well coated. Arrange the chicken on a baking sheet and broil until it is cooked through, about 4 to 6 minutes, turning once.

In a large bowl combine the Romaine, celery, shredded carrots and scallions. Toss with the dressing. Divide the greens between 4 plates, top with the chicken. Serve with extra hot sauce.

For the Blue cheese Dressing:

  • 2 tablespoons mayonnaise
  • 1/4 cup lowfat buttermilk
  • 1/4 cup plain fat-free yogurt
  • 1 tablespoon white vinegar
  • 1/2 teaspoon sugar
  • 1/3 cup crumbled blue cheese
  • Salt and freshly ground pepper (to taste)

Fold a full sheet of paper towel into quarters and put it into a small bowl. Spoon the yogurt onto the paper towel and place in the refrigerator for 20 minutes to drain and thicken. In a medium bowl, whisk the buttermilk and thickened yogurt into the mayonnaise until smooth. Add the vinegar and sugar and continue to whisk until all the ingredients are well combined. Stir in the blue cheese and season, to taste, with salt and pepper.

the Flyers are playing tonight… Game 5 VS the Habs (Montreal Canadiens)…if they win…they close out the series and move on to the Stanley Cup Finals!!!

Yoga Pose May- Boat Pose

Sorry it has been awhile since my last post!!!  I am taking two summer classes (human anatomy and physiology 1 & 2) from 8:00-4:30 monday-thursday and have two tests everyday in it– so that has been more or less why i havent been posting…that plus the fact that I am just plain LAZY.   the class is only for a month (may 17-june 17) so dont feel too bad for me…ill deal.

anyway- Tina from Carrots N Cake started up Yoga Pose May” and it is my turn to demonstrate a pose.  My assignment is boat pose. sort of ironic because this pose is pretty difficult (for me at least).  I have practiced it a lot have gotten much better at it….although I still have room for improvement. That is what I love about yoga… each time you practice  you can see yourself improving…going deeper into a pose/finding more stability/etc. well anyway, onto the pose….

How to do boat pose: it down on your Yoga Mat. Pull in your legs and grab your upper legs on the back side below the knees. Tilt your upper body backwards so that your lower back carries your weight and the entire upper back is aligned in a straight perpendicular line. slightly pull your legs with your arms to maintain the posture. extend your arms forward and parallel to the floor. stretch your legs and feet together. See to it that your back remains straight. When you find the position easy, you can reduce the stretching power of your arms without changing the position. Eventually bring your arms along the body parallel to the floor and focus on a particular spot for your balance. Quietly breathe in and out through your belly and try to maintain your relaxation during your efforts.

benefits: Strengthens the abdomen, hip flexors, and spine. Stimulates the kidneys, thyroid and prostate glands, and intestines. Helps relieve stress, Improves digestion

Before getting to the topic of tonight’s post I would just like to comment on the Flyers win tonight! woohoo… for those of who who are not following the NHL playoffs…the Flyers are playing the Bruins and have lost their first 3 games.  The Flyers came back in game 4 with an OT win and tonight (game 5) shut the bruins out (4-0).  and my favorite player- Simon Gagne (who just came back in game 4 from an injury) scored twice.  If the Flyers end up winning this series (fingers crossed) that will make them the 4th team in NHL history to come back from a 3-0 deficit and win the series…so lets hope that this is the year that the Flyers make some history…..

unfortunately….our starting goal tender- brian boucher suffered a pretty serious injury… sprains in both of his MCLs…pretty sure he is done (for the series at least).  But or backup- Michael Leighton did a great job filling in Boucher’s spot tonight…and in my opinion is just as good. I guess we will see about that though!!!

anyways…tonight I decided to try a different twist on the usual black bean burgers that my sister and I make.  I saw a recipe in a magazine (CookingLight) for Black Bean Burgers with Mango Salsa and I have been meaning to make them for some time now…and tonight I finally decided to try the recipe out 😉

Black Bean Burgers with Mango Salsa

  • 2 (15 oz) cans of black beans, rinsed and drained
  • 3/4 C chopped (fine) fresh cilantro
  • 3/4 C (aka 3 oz) shredded Monterey Jack Cheese
  • 1/4 panko (panko is Japanese breadcrumbs)
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp sea salt
  • 1/2 med jalapeno- finely chopped
  • 2 large egg whites
  • 1 1/4 C chopped and peeled mango (this is about a medium sized mango)
  • 3 T chopped shallots
  • 1 1/2 T fresh lime juice
  • 1 garlic clove, minced
  • whole wheat buns (6)
  • lettuce leaves (optional)
  1. place black beans in a medium bowl and mash with a fork.  stir in 1/2 C of cilantro and the next 7 ingredients (up to and including the egg whites).  Shape the bean mixture into 6 patties (about 1/2 inch thick).  you can either grill them outside or bake at 350 for 20 minutes, turning once.
  2. for the mango salsa: combine remaining cilantro, mango, and next 4 ingredients (up to and including minced garlic) in a medium bowl.  place a patty on bottom half of each hamburger bun; top with lettuce leaf and the salsa!

Verdict:  These burgers were very good and had a MUCH better taste than the other black bean burger recipe that I make.  The only thing I will say is that they were a little hard to handle on the grill (I decided to grill them outside rather than bake them).  I think next time I’ll add some Vital Wheat Gluten to help keep them together (I use this in the other recipe and it really does help to keep the patties together).  We ended up taking the burgers inside and used a grill pan….this helped keep them get a little harder.  but I think the Vital Wheat Gluten next time will help out alot…

With these burgers I decided to make my favorite…. Grilled Lime and cilantro sweet potatoes

Ingredients

  • 3 sweet potatoes, unpeeled
  • Kosher salt
  • 2 teaspoons finely grated lime zest
  • Pinch of cayenne pepper
  • canola oil- not much just enough to brush
  • Freshly ground pepper
  • 1/4 cup finely chopped fresh cilantro

Directions

Parcook the potatoes: Place in a pot of water and boil until fork-tender; let cool. Slice each potato lengthwise into eighths.

Preheat a grill to medium or place a cast-iron grill pan over medium heat. Mix ~ 1/2  tablespoon salt, the lime zest and cayenne in a small bowl.

Brush the potato wedges with the oil and season with salt and pepper. Grill until golden brown on all sides (including the skin) and just cooked through, about 1 1/2 minutes per side. Transfer to a platter; immediately season with the salt mixture and sprinkle with cilantro.

Fig Almond Biscotti

Last night my sister and I made our parents dinner at my sisters’ apartment in philly.  I’ll share the dinner part with you in another post but I really wanted to share this recipe for biscotti that we made for dessert.  It came out AMAZING…exceeded my expectations.  My dad (the toughest critic on the planet) said it was the best biscotti he ever tasted…I told him that was a pretty bold statement to make but that must have meant that he thought they were good, eh? I’ll have to take a close up photo for the next time I make these…but just trust me on this one…these are GREAT and you should definitely give this one a try…

  • 2 cups  flour
  • 1 1/2 tsp baking powder
  • 3/4 cup sugar
  • 1 stick unsalted butter (room temp)
  • 1 tsp grated lemon zest
  • 1/4 tsp salt
  • 2 large eggs
  • sliced almonds (3/4 C)
  • figs (chopped- do this yourself)- 2/3 C

Preheat the oven to 350 degrees F.

Whisk the flour and baking powder in a medium bowl to blend. Using an electric mixer, beat the sugar, butter, lemon zest, and salt in a large bowl to blend. Beat in the eggs 1 at a time. Add the flour mixture and beat just until blended. Stir in the figs and almonds

Form the dough into a 13-inch long, 3-inch wide log on baking sheet that is either lined with parchment paper, or sprayed/dusted with flour. Bake until light golden (40 minutes) and then let cool for 30 minutes.

Place the log on the cutting board. Using a sharp serrated knife (like one you would use for a french baguette), cut the log on a diagonal into 1/2 to 3/4-inch-thick slices. Arrange the biscotti, cut side down, on the baking sheet. Bake the biscotti until they are pale golden, about 15 minutes. Transfer the biscotti to a rack and cool.

Broad Street Run 2010!!


Good morning! Sorry it has been awhile since I last updated…things got a bit busy with school and everything so I decided to take a little break from blogging.  I am now home for the summer (well I do have 1 take-home final that I have to e-mail in by wednesday but I am pretty much done with it anyway)!  After I finished up with my final on Saturday I hopped in the car and headed straight to my sisters’ apartment in Philly.  She made me a nice dinner (roasted salmon, roasted sweet potatoes, and sauteed string beans/carrots) and then we got some yogorino froyo (YUM).  We got to bed early, woke up early, and got ready to run the Philadelphia Broad Street Run!

For those of you who do not know…the Philadelphia Broad Street Run is the largest 10 mile race in America!!  This year was the first time they capped off the amount of participants at 30,000!  My sister and I have always wanted to run it but it is usually at bad time of year for us…finals in school, etc. But this year we decided to just go ahead and run it (even though Mary had just run the Boston Marathon two weeks ago!).

Once the subway doors closed my sister turned to me and said “please tell me you have your Garmin on your wrist”- I looked down…and of course I had forgotten mine at home…so we waited until the next stop, hopped off of the subway, and ran back to the apartment to grab our garmins!

As many of you know, Mary just ran the Boston Marathon (on April 19th).  She said her legs were still pretty tired and so our “plan” was to stick together, go really slow, and just enjoy the run.  I knew better than that though.  I knew as soon as our corral started to go that this was not going to be a sunday afternoon jog…so in a way, I was prepared for what I was about to face at the starting line!  hahaha….I was happy with our results… I set a PR (personal record)!

We crossed the finish line together in a time of:

1:16 (7:35 min/mi)

I placed 502 out of 26,169 runners

and 58 out of 1921 runners in our age group (21-24)


Womens's winner: Buzunesha Deba: 55:13

Men's Winner: Alene Reta 48:10

The first place wheel chair finisher was Chad Johnson (Charlestown, IN): 35:02. It was truly inspiring to see the wheel chair racers during the race.  I remember running by one lady in particular and thinking to myself "wow...this lady is AMAZING" I was truly inspired by all of them out there yesterday- definitely not an easy thing to do to say the least...

due to the heat, there was alot of people collpasing from dehydration,etc.  It was pretty scary!  But luckily nothing major happened and everyone was pretty much fine.

After the race we took the subway back home, showered, and headed to one of Mary’s favorite brunch spots in Philadelphia- Sabrina’s .  This place is GREAT. Everything on the menu sounded delicious- I really want to go back for lunch sometime!  Definitely check this place out if you live in the area…

After our brunch/lunch we headed to our second home- Wegman’s- to get some work done.  I had 2 take home finals I needed to edit..I finished one and sent that in and still have to finish editing the other one but I am almost there!!!  Later that night I FINALLY made it home to my parents and doggies…it felt SO nice to get home 🙂  I watched some home videos that my dad put onto DVDs (which made me even happier to be home), went to bed, and FINALLY slept in for the first time in foreverrrrrr.

Today I have to finish my final, unpack my car (blah), clean out my room, etc.  Not looking forward to it but I know it will feel good once it is all done… Hope you are having a great start to the week!!
