hey everyone!  so today was my first day of classes!  I had physics, calc, and human freedom…overall they seem like they will be okay… I already had physics homework to do tonight! AH!  im really trying to stay on top of everything this semester so I got on it right away!  In my class travels today I stopped at the post office and found that I received a package from Nicole over at Zico Coconut Water!!

Nicole was also kind enough to send me recipes for cocktails and smoothies 😉 thank you thank you!  I will do a full product review (including company info) when I try one of the flavors (which will be tomorrow after my run/bikram yoga).

in other news…My sister made Vegetarian black bean chili with bulgar and she called me telling me how amazing it was…so clearly I went right to the store….picked up the ingredients I needed…and made it for dinner tonight!

  • 1/2 cup bulgur
  • 1 cup onion, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 1/2 T chili powder
  • 2 t oregano
  • 2 t paprika
  • 1 t cumin
  • 1 28oz can whole tomatoes
  • 2 15 oz cans black beans
  • 1 jalapeño
  • 2 T olive oil
  • 1/8 t salt, plus more

For the Bulgur

In a medium saucepan, bring one cup of water and one-eighth teaspoon of salt to a boil. Add the bulgur and return to a boil. Reduce heat, cover, and simmer for fifteen minutes, or until the water is absorbed. Stir, then remove form heat and set aside.

For the Chili

In a large skillet, heat two tablespoons of olive oil over medium heat. Add the onion, bell pepper, jalapeno and garlic, and season with salt. Sauté, stirring frequently until onion is soft, being mindful not to burn the garlic.

Add the chili powder, oregano, paprika and cumin and stir to combine. Stir in the tomatoes, breaking them up with the back of a wooden spoon. Stir in the beans, cooked bulgur, and simmer, covered forty-five minutes to one hour.

Garnish with chopped red onion, fresh cilantro and of sour cream if desired.

Serves 4 to 6

I topped the chili with smashed avocado with lime and cilantro (with a roll on the side).  the verdict?  AMAZING. seriously. the best chili I think I have ever had.  please try this recipe…you will not be let down! 😉

back to school!

Hey all!  Let’s see here… yesterday my roommates came!  before they got here I decided to get out of the way and hit up the mall and the storage unit (to check out).  At the mall I got 2 shirts (one plaid button up from Gap- the lady left the security tag on it and now i have go back!! boo and one from Express (the one I am wearing in the picture at the bottom of this post).  I also got some sport beans for my long run (dicks sporting goods)!

0829091104my sister uses these and says they are really good so I decided to give it a try.  I am thinking I will use it this saturday for my 12 mile run.  I definitely wont need the entire pack for only 12 miles but I think its a good idea to start experimenting!  I also bought a ID/key thing that you put on your shoes—I know its really dorky looking but hey I have nowhere to put anything!  What do you do with your id/keys?  Do you wear a fuel belt for long runs?  and do you wear some sort of identification in case something happens to you while on your run??

This place was really cool/good!  Will definitely go back again!  On the way back to school I stopped at the store for apples, bananas, and avocados (the essentials clearly haha) and met up with my roomies!!! I am so so so so happy that they are finally here- I was getting lonely and very scared at night haha.  before i knew it, it was night time and we were headed out for your first night of fun for the semester wooohooo

this morning I woke up and went to bikram yoga— best decision ever. I felt so energized and “detoxed” after the class!  I made guacamole again today too- my roommates really liked it! I also gave Mckay a date/ab and SHE HATED IT!? what!? i didnt think it was possible.  oh well haha

I may go to the store to get that security tag removed now (annoying, righto?) and I think tonight we are seeing a movie and going to Mr. Yogato again 😉  ….classes start tomorrow 😦

Mr. Yogato!

hey hey!  well lets see…tonight I went to Bikram yoga with my friend Kristin.  We went to a place about 5-10 minutes away from my school- the studio was AWESOME.  so big…definitely not what I am used to (but in a good way).  We paid 33 for unlimited classes for a month- good deal if you ask me.  It was Kristin’s first time and she absolutely LOVED IT.  She was really good at it too since she is a Pilates intructor.  we plan to go back on sunday…and hopefully we can drag some of our roommates out of bed to come with us!

I came home from yoga and make a quick dinner….

I used this for the panko crust… it usually sticks better but I was in a rush and I guess i didnt really care too much- still tasted great!

After dinner I convinced my friend Rob to come to Fells point with me to go to this frozen yogurt place I saw called Mr. Yogato!

really good. the cappuccino flavor was not very strong AT ALL but the frozen yogurt was really really tasty. it was not self serve but they really had a nice presentation of it and had  good portion sizes…not too big not too small.  and they only have 4 flavors to chose from so it was not a big deal. they had so many toppings to chose from, too…

I added some cinnamon to mine too.  next time I would like to add a bunch of fresh fruit instead of the pb cups…probably will be really good.  I am going to see if my roommates wanna go back on sunday afternoon 🙂  I actually forgot my money!!!  Rob was kind enough to pay for me- ill have to pay him back the next time I see him. good thing i dragged him there with me or I would have had to turn around haha.  our school goes to the bars @ fells point on the weekends and since the freshmen all just moved in we saw a lot of loyola kids walking around…it was kind of funny.

when we got back to campus we bumped into these two girls in our class- bridget and kali…and then stumbled upon this little guy huge slug:

the return of hot oats

Good morning!  Woke up this morning and enjoyed a *new* green juice creation (well actually its a combo that I sometimes get at this cafe by my house)- the combo included Romaine, carrot, kiwi, orange, apple, and banana (but when i put the banana in the juicer I am not sure if any “juice” actually came out- how do you add banana to juices?! hmm)

this was a winning combo…i liked it very very much.  not sure which combo is better though- they are both special in their own way hahah.  anyway after drinking that, I got ready to set out on my 7 mile run.  It was thundering and lightening like CRAZYYYY last night but thank goodness when I woke up there was no rain coming down.  however, the storms are returning later tonight!   The run was JUST okay.  im telling you these hills are killing my speed!  I mean i know they are good to do but I do not want to do them EVERYDAY! i feel like by the time I reach the top of the hill I am so tired and cant go fast haha.  anyway- this girl on the XC team at my school (who I met at staff training this week) told me about this awesome trail about 20 minutes from our school that runs for like 20+ miles and she said that it is really awesome.  and best of all there is this healthy cafe there too- perfect for a post-run 😉 anyways…i plan to go there for my long runs- next saturday is 12 miles… so i think I may venture over there. and best of all…no hills over there! wooohooo

Well when I got home I was in the mood for some good old hot oats!  perfect day for hot oats. dreary, not very warm, a day you want to spend in the house with sweatpants on ;)…so cook up hot oats I did!

I seriously have not had these in about 2 months!?  I used to eat this EVERY.SINGLE.DAY.  how crazy is that? I am glad I ventured out of my comfort zone but this did taste very good…exactly what I was craving.

the rest of the day I am just going to relax…read a little bit, do some laundry, pick up a couple things at the store, and at 4 my friend Kristin and I are going to Bikram yoga!!!  I found a studio that is about 5 minutes from my school and it is 33 dollars for an unlimited first month. not bad at all.  I am very excited for this!  tomorrow is a rest day- much needed in my opinion. im pretty tired from moving in, moving my roommates things in,working out, staff training, shopping for the room, etc.  and…sidenote… my roommates come tomorrow!! YAYY!

not sure what to make for dinner tonight…hmmmm

Well today I went to the storage unit my roommates and I rented out for the summer to pick up all of their stuff (I got my stuff(as well as the shared stuff) out on monday).  boy…this was much more difficult that I had anticipated.  There was tonsss of stuff for one little girl to carry and it was hot outside!  and of course i had to stop every 2 minutes to prop open a door while balancing a huge crate on my leg haha.  lets just say by the end of it all I was literally dripping in sweat. attractive i know.  and I took a shower BEFORE i went (stupid stupid!) so i ended up having to take another shower. BOO.  anyway…im glad it is all done and I am glad that I did it because I think it will help them all out on saturday…they are going to be battling all of the crowds and such and I am happy to take one thing off their hands at least.  and hey- my guns are looking stronger from it all too haha kidding.

well after moving all the stuff…i made myself some fresh guacamole!! this batch came out soo good! i enjoyed it with a slice of ezekiel and some baked blue chips ;)….and pretty much ate the whole thing except for a tiny bit that I transferred to a tiny glass bowl to eat tomorrow.

dont worry I ate more than this today- i just post the highlights of the eats!  anyway- from 8-11:15 I had to work at the freshman “FAC attack” at the gym.  They had a whole bunch of things there- like dodgeball and push up contests,pull up, you name it.  I had to work the “run a mile on the treadmill” station- real exciting haha.  you award points to the freshmen. The points go into a raffle and then the freshmen can win some  prizes such as a free pizza party for your floor or 2 tickets to the ravens game. not bad..

Well I am pretty beat now and I have to get up and run my 7 miles tomorrow- looks like the weather will be cool so i wont have to wake up at the crack of dawn!  woot woot.  good night!!

living green

Good morning!  I was really exhausted last night so I decided to not set an alarm and wake up whenever…which happened to be at 8:17 AM.  I drank this Green Juice 😉

When I made this juice, I also made a different combo that I will tell you about tomorrow—you will just have to wait and see my friend haha.  I set out on my 3 mile run—-and then did level 2 of the Bryan Kest Yoga DVD. I am in absolute love with this dvd!!

Then, I enjoyed my breakfast cookie 😉

Well I am gonna get ready for the day now and then head over to the Storage place my friends and I rented to get all of their stuff out of it for them (am I a good roommate or am i good roommate? hahah) then tonight I have to work a freshmen orientation thing called the FAC (fitness and aquatic center) attack.  basically its just a bunch of fun games at the gym for the frosh. by the way- guess what happened at my college’s gym on sunday? Phelps and Shaq swam again each other for a TV show !! Too bad I moved in on Monday and totally missed it haha. Phelps comes to our gym a lot because he lives in the area and is friends with our swim Coach.  back in may I lifted right next to him…totally kicked the crap out of him. what a wimp he is.

hey all! workout today… 5 mile run: 8:26/mi time: 42:08.94- why cant i escape the hills!? I guess its a good thing that I am doing some hill training because I know the philly marathon has a good amount of hills…so at least I will be ready for them.  This run was really really enjoyable.  I woke up at 6 to get it in but it was still dark out so i waited until 6:30.  I couldnt sleep the whole night because I was excited to get up and run… strange? you tell me. haha …did yoga dvd again as well ;)

Before the run I had a date with pb and half a peach- I was so hungry when I woke up so I had to have something or else I would have passed out on the run.  This was a perfect choice- no cramping up on the run at all.  After the run I made my first green monster in the new apartment 😉 (the blender isnt as good as I am used to- but ill deal!)

After training this morning I made a trip to Dicks sporting goods for some running socks (I am very low on them) and I found a cute pair of under armor capris that I loved so I got them too 😉  and then I headed over to wegman’s to pick up a few things (including things for a green juice tomorrow morning)…

I decided to cook some things so I can freeze it and have it for when school starts and I get busy!

p.s. I tried a newman’s own chocolate bar last night… dark chocolate.  verdict- AWESOME.  wasnt too strong and had such a great flavor…not dry at all. they also have a super dark chocolate flavor that I am excited to try out (I am sure you dark chocolate gurus out there would love it)
