hey everyone! so today was my first day of classes! I had physics, calc, and human freedom…overall they seem like they will be okay… I already had physics homework to do tonight! AH! im really trying to stay on top of everything this semester so I got on it right away! In my class travels today I stopped at the post office and found that I received a package from Nicole over at Zico Coconut Water!!
Nicole was also kind enough to send me recipes for cocktails and smoothies 😉 thank you thank you! I will do a full product review (including company info) when I try one of the flavors (which will be tomorrow after my run/bikram yoga).
in other news…My sister made Vegetarian black bean chili with bulgar and she called me telling me how amazing it was…so clearly I went right to the store….picked up the ingredients I needed…and made it for dinner tonight!
- 1/2 cup bulgur
- 1 cup onion, chopped
- 1 red bell pepper, chopped
- 3 cloves garlic, minced
- 2 1/2 T chili powder
- 2 t oregano
- 2 t paprika
- 1 t cumin
- 1 28oz can whole tomatoes
- 2 15 oz cans black beans
- 1 jalapeño
- 2 T olive oil
- 1/8 t salt, plus more
For the Bulgur
In a medium saucepan, bring one cup of water and one-eighth teaspoon of salt to a boil. Add the bulgur and return to a boil. Reduce heat, cover, and simmer for fifteen minutes, or until the water is absorbed. Stir, then remove form heat and set aside.
For the Chili
In a large skillet, heat two tablespoons of olive oil over medium heat. Add the onion, bell pepper, jalapeno and garlic, and season with salt. Sauté, stirring frequently until onion is soft, being mindful not to burn the garlic.
Add the chili powder, oregano, paprika and cumin and stir to combine. Stir in the tomatoes, breaking them up with the back of a wooden spoon. Stir in the beans, cooked bulgur, and simmer, covered forty-five minutes to one hour.
Garnish with chopped red onion, fresh cilantro and of sour cream if desired.
Serves 4 to 6
I topped the chili with smashed avocado with lime and cilantro (with a roll on the side). the verdict? AMAZING. seriously. the best chili I think I have ever had. please try this recipe…you will not be let down! 😉

That chili looks great! I have all those ingredients except for the bulgar, something I’ve never tried! I’ll see if I can find it, I would totally try this recipe.
Hope you like the coconut water – I’ve had Zico once before and I agree, it’s better cold. When I drink coconut water out of the young coconut itself it’s much better when it’s been in the fridge than at room temp.
Your dinner looks amazing! And I’m definetely interested to hear about this conconut water…I’ve never tried them and have heard totally contrasting opinions about it!
