GOOD AFTERNOON!!
wow. last night was the first night FOREVER that I could take a step back and have some fun/time for myself. no biology, no math, no physics, no running, NADA. We went out to a bar called the stalking horse in federal hill. very fun night 😉 andddd my parents are coming to visit me today until saturday afternoon and I COULD NOT BE HAPPIER! Lets go on to the yesterday’s happenings….shall we? I woke up and made a nice bowl of hot oats:
- 1/2 C oats, 1/2 C H20, skim milk, raisins (soaked during cooking, banana (1/2 cooked in, 1/2 topped), pomegranate seeds, honey/cinnamon
what it really looks like…ALL MIXED UP!
came out AWESOME. best pomegranate of the season 😉 haha.
I then went to my microbiology exam. Dont you hate when you show up early to an exam and everyone around you is talking about (and freaking out about) the exam? Well I walked in and literally EVERYONE was saying how they did not go to bed at all or that they were going off of 2 hours of sleep. um…am I the only one that went to bed at 11 pm last night and got an amazing night of sleep? haha I did wake up earlier than usual to review my stuff but for me.. I need my sleep before an exam! I learned that the hard way in my first biology exam of freshmen year (lets just say my friend Matt and I pulled an all nighter, could not think straight during the exam, and thus flunked our first college bilogy exam…stupid stupid.) anyway…I have been reviewing for this exam for awhile now. I always review my notes the day we learn them and I am constantly looking over things. So I felt pretty good about it and decided to go to bed early. I hope it paid off… I really cannot afford to flunk this exam! Keep your fingers crossed for me!
I had biology of mammals class after this and then physics lab. I went on my 5 miler after class. average 7:59/mi. Felt good! but towards the end I started to realize that my legs are TIGHT! I need to stretch more and I also need a day off- aka tomorrow (thank you thank you!). I really would love to do some yoga tomorrow but I doubt that will happen.
anyway…onto the whole reason for the title of this post! I decided to make Mamas Weeds’ Lentil chili!
Lentil Chili
1 Tbsp extra virgin olive oil
1/2 medium onion, diced
1/2 medium pepper, diced
2 cloves of garlic
1 1/2 c water
1 1/2 c vegetable broth
1/2 lb dry lentils, rinsed and drained
8 oz crushed tomatoes
1 Tbsp chili powder
1 tsp cumin
1 tsp oregano
ground red pepper if you like it spicy!
dash of salt if desired
A large sauce pan, saute onion, pepper and garlic in EVOO until soft. Add water and broth and bring to a boil. Add lentils. Stir and cover. Cook for 30 minutes on medium to low heat, stirring occasionally.
enjoyed with some nice seduction bread ;)…verdict? awesomeeee. I did not have enough chili powder on hand so I think I should have added some more red pepper for even more of a kick but it was still GREAT. I froze 2 servings of this so I enjoy it on the nights that I do not feel like cooking (or do not have time to cook!).
Well I have to go back into the microbiology lab to stain some bacteria! We have to identify and unknown and my friend Lauren and I want to make sure I IDed it correctly! Then…I have to pick up my pants workout pants from the cleaners (they were being hemmed). I think Ill stop at whole foods on the way too (since I will not be going tomorrow!). Then my parents are coming! We are going out to eat to Woodberry Kitchen– I have heard SOOOO MANY great reviews– very excited!!! On Saturday my sister and I are running 13 miles (I really only have to do 12 but she has to do 13… so I am just going to suck it up and run an extra mile!) and thennnn my parents, sister, and I are going out to breakfast to Spoons in federal hill 😉
