Hello hello! Evergreen monday yet again. Today- I ate lunch at home and decided that I would get some tea/froyo at the evergreen instead.
I only got my physics homework done- it took awhile to read the chapter and solve the problems!!! I still need to study microbiology tonight 😦 and then I took a venture over to Wegman’s- I will tell you about that tomorrow my friends.
For dinner tonight I made Whole Wheat Penne with Sweet Potatoes and Ricotta Cheese!!!! I saw this on Meg’s (Be Fit. Be full.) blog (who got it from cooking light magazine) and it looked amazing so I got the ingredients to make it when I went to Whole Foods this past weekend!
Ingredients:
- 6 oz spaghetti
- 1 tbsp olive oil
- 1 small sweet potatoes cut into 1/2 inch pieces
- Kosher salt and black pepper
- 1 shallots, sliced
- 1 tbsp chopped fresh rosemary (I used dried)
- 1/8 cup grated Parmesan
- 1/8 cup ricotta
Directions:
- Cook the pasta according to the package directions. Reserve 1/2 cup of the cooking water. Drain the pasta and return it to the pot.
- Meanwhile, heat the olive oil in a large non-stick skillet over medium heat. Add the potatoes, 3/4 tsp salt, and 1/4 tsp pepper and cook, covered, stirring occasionally for 10 minutes. Add the shallots and rosemary and cook until the potatoes are tender, 3 to 5 minutes.
- Toss the pasta with the potato mixture, Parmesan, and the reserved cooking water. Dollop with the ricotta before serving.
and the verdict is….. great!! oh man the smell of the evoo, rosemary, and shallots while cooking was AMAZING. this dish is really really tasty/fun/different/quick to make/etc. definitely recommend that you try this! wooohooo look at me! 2 new recipes 2 days in a row! the picture actually makes this dish look kind of “dry”…why is that? not really sure but i hope you do not get the wrong impression because this was not dry or blah at all!
okay- well I have a lab practical for my biology of mammals class on wednesday so my roommate Becky, my friend Mike, and I are going over to the lab right now to study for it together! It is going to be creepy to be in the lab late at night! ahh! see you in the morning!
Wow that looks great. The only time I’ve had ricotta was in canolli a cake made with amaretto–it was definitely a winner. I’d love to try straight ricotta though

i neeed some froyo in my life. i cant wait for sprinkles to open up in town!! that pasta looks a little risky, probably wouldnt have tried it but im glad you did and you liked it. and i meant to comment on yesterdays but i forgot but i have never heard of spaghetti squash but it really looks like spaghetti! i want to try that recipe so put it in your recipes tab por favor!
over the weekend while joe was here i took another shot at the chocolate breakfast cookie and it came out muchhh better when i used 1 tbsp of cocoa powder and 1 tbsp of choco peanut butter protein powder by muscle milk. definitely less rich but still filled me up and i also added some peanut butter! it was soo good. i bought the pumpkin pie spice then realized that my pumpkin had gone bad 😦 so now i gotta go get some pumpkin! hopefully supermarkets around here will have some since you seem to be having little luck in finding it. enjoy the rest of your night ! ❤
you are lucky that sprinkles is opening up near you- its the best froyo. there is one on mary’s campus as well. haha yeah it was a risky recipe- definitely a different pasta dish that is for sure…do you like sweet potatoes? if you do i really think you would enjoy this- such great flavors. and yes- absolutely try the spaghetti squash- make sure u add grated parm- makes it all the better. and it is in my recipes tab!!! open your eyes!
im glad your chocolate cookie turned out better this time around- i enjoy the other two combos better than the chocolate one (the ones i have on my recipe tab). but u LOVE CHOCOLATE so i can see why you prefer this one- although you have never tried the others! sorry about the pumpkin going bad! i am doing a post about the pumpkin- and why i couldnt find it (fyi i found it at wegmans finally!). there is a reason the pumpkin is so hard to find!

im not a huuuge fan of sweet potatoes, here and there I like them. maybe if i am feeling adventurous, which is a rare occasion haha and i didnt even check recipes! you are way ahead of me. and i remember i got my pumpkin at wegmans too! hmm i guess theyre hoarding all of the canned pumpkin! i look forward to reading your pumpkin post, love you too <33
haha supposedly Libby’s is the best canned pumpkin out there but i am sure wegmans is good too! we will have to compare 😉
Hope it wasn’t too creepy in the lab! I should know! long hours in the science building do make you crazy… but they also make you get good grades, so there you go! I love sweet potatoes, can’t wait til it gets colder to bake some up! Also, the evergreen has froyo? awesome!
yup!!they JUST got froyo- plain and a berry flavor i believe it is? very good! do you go to the evergreen much? i like the fact that they have free wi-fi- i do alot of my homework there! and they have this sandwhich called the powerhouse- 12 grain bread with hummus avocado carrots sprouts tomato cucumber- so good!! they also have gelato- but it doesnt beat out the pitango gelato- you have been there in fells point right? and the lab was not too creepy- just really really cold! haha

ooh, what a cool recipe! I would never have thought to put sweet potatoes in pasta. Gosh, I have like the longest list of to-do recipes! Too much good food on all the blogs!
what a great combo! I am running Philly on Nov 22nd too. As far as restaurants go – you have got to try Samos in Greektown. Some others are Woodberry Kitchen and Rocket to Venus – love them both. I havent been out to dinner in Annapolis as much, but Pussers is always good and I have heard that Joss Sushi is amazing. It is on my list to try!
Yay! Glad it turned out well! When I made that recipe that was the first time I had ever sauteed sweet potatoes, as opposed to baking or grilling them.
And now I am in the mood for frozen yogurt 🙂
